Chef Damon draws on the traditional techniques he mastered in Michelin-starred kitchens in his native U.K. and under the tutelage of Alain Ducasse in New York City, to create seasonal restaurant menus that are also inspired by the harvest from Thomas Jefferson's kitchen gardens at Monticello. A hand-painted mural of Monticello’s south vineyard graces the walls of Plume, evoking Thomas Jefferson’s passion for cultivating, collecting and enjoying fine wines. This lifelong pastime is also reflected in our impressive wine cellar of more than 1,200 labels. Presided over by sommelier Michael Scaffidi, formerly of French Laundry, Plume’s wine list spans more than a dozen nationalities and dates back to a rare 1780 Borges Madeira Bual. Among the more than 50 vintages are those Jefferson himself enjoyed in his time as well as newer wines he might select were he alive today. Providing the final flourish to this unforgettable dining experience is service as discreet as it is attentive, and always informed. Quill's lounge interior is steeped in Jeffersonian inspiration. Its parquet flooring recreates the pattern Jefferson designed for Monticello's main salon, while a collection of 18th-century maps on the walls follow Jefferson's journey through the wine regions of France, Germany and Italy.
